    Easy Mixed Berry Trifle

    This easy, shortcut trifle made with mixed summer berries, sponge cake, cream and custard is absolute Christmas dessert perfection!

    If you've been around here for a while, you will know that 9 times out of 10, I'm a "make it from scratch" gal and generally I will do whatever I can to make sure I am sticking with that. But there are times that call for shortcuts, and Christmas as a busy mum is absolutely one of those times!

    The beauty of this trifle is the simplicity, without sacrificing the taste (or look) of the dessert.

    Ingredients

    • Bought sponge cake - you can make your own, but honestly, bought sponges here are just so good
    • Sherry or orange juice - for soaking the sponge in - use orange juice for kiddos or if you have a room full of non-drinkers, or sherry if Grandma is coming!
    • Berries - any berries are great in this - I love using strawberries, blueberries, raspberries and boysenberries when they are in season but if they're not, frozen berries will also work really well!
    • Strawberry jam - this makes the berries nice and sweet and helps get them a bit saucy
    • Bought custard - again, feel free to make it yourself but the name of the game for this one is simplicity and speed, and bought custard tastes like childhood to me which I love!
    • Whipped cream - to mix with the custard and extra for topping

    How to assemble

    The more I think about it, the more I think trifle is the real winner of the Christmas dessert table - you literally cannot go wrong when putting it together! It is a simple matter of getting all of the ingredients prepped and then layering it up in a trifle bowl.

    Start with a layer of sherry/juice soaked sponge cubes, top with a layer of berries and a layer of custard cream.

    Repeat this 2 more times or until you've used up all the ingredients.

    Top with extra whipped cream and decorate with berries, mint leaves, grated chocolate - whatever your heart desires!

    Leave in the fridge overnight for all the flavours to mingle and serve up the next day.

    So impressive, so tasty and super simple to throw together for last minute pot-lucks or an easy option for Christmas day!

    Ingredients

    • 2 trifle sponges (Approx 20cm x 20cm cakes cut into 2cm cubes)
    • 1 cup sherry or orange Juice
    • 3 cups fresh summer berries
    • ¼ cup strawberry jam
    • 1 kg vanilla custard
    • 1 cup whipped cream
    • Extra whipped cream, berries, mint leaves and grated chocolate for topping.

    Instructions

    • Soak the sponge cubes in either sherry or orange juice (this step is optional).
    • In a medium sized bowl, combine the berries with the strawberry jam
    • In a large bowl or measuring jug, combine the custard and whipped cream
    • In a 20cm trifle bowl, add a ⅓ of the trifle sponge cubes, followed by ⅓ of the berries and ⅓ of the custard cream.
      Repeat the process, making 2 more layers.
    • Top with extra whipped cream, berries, mint leaves and grated chocolate.
    • Chill in the fridge overnight before serving to allow all the layers to come together and the flavours to mingle!
