2trifle sponges(Approx 20cm x 20cm cakes cut into 2cm cubes)
1 cupsherry or orange Juice
3cupsfresh summer berries
¼ cupstrawberry jam
1kgvanilla custard
1cup whipped cream
Extra whipped cream, berries, mint leaves and grated chocolate for topping.
Instructions
Soak the sponge cubes in either sherry or orange juice (this step is optional).
In a medium sized bowl, combine the berries with the strawberry jam
In a large bowl or measuring jug, combine the custard and whipped cream
In a 20cm trifle bowl, add a ⅓ of the trifle sponge cubes, followed by ⅓ of the berries and ⅓ of the custard cream. Repeat the process, making 2 more layers.
Top with extra whipped cream, berries, mint leaves and grated chocolate.
Chill in the fridge overnight before serving to allow all the layers to come together and the flavours to mingle!
