This 10 minute rocky road recipe is a delicious treat to have around all holiday season and it makes a lovely gift! It's quick to make, only has 5 ingredients and is loved by kids and adults alike!

You know how there are some recipes that you save to make around Christmas, even though they might not even be specifically Christmas recipes and then every year when you make them you wonder why you don't make it more often? This rocky road is absolutely one of those recipes! Although the speed at which we race through this when I do make it is probably exactly why I reserve it for gifting to other people!
✨Top Tip
Traditionally you add raspberry lollies or fruit jubes to Rocky Road but they can often be hard to find.
Instead, I like using a block of chocolate such as Whittaker's Berry Forest that already has jubes and biscuit pieces in it. It cuts out the step of chopping sticky lollies and means that you can get all the ingredients you need in one hit from the supermarket.
Why we love this recipe
I mean, other than the obvious, totally delicious sweet treat and amazing homemade gift, the other thing I really love about this recipe is that kids can do it!!
It's one that younger kids can help with - chopping marshmallows, measuring and pouring, mixing and of course licking the spoon! And older kids would be capable to do this on their own as it only requires the microwave and setting in the fridge.
I especially love this if you are making this rocky road to give as gifts to teachers or other important people in your children's lives - they get to be a part of making and gifting something homemade to their special people!

Ingredients
- Whittaker's Berry Forest Chocolate - it already has the jubes and biscuit pieces so it saves a step of adding those ingredients separately
- Coconut oil - this helps set the rocky road and gives it a nice shine
- Marshmallows, cut in half (you can also use mini marshmallows!)
- Roasted peanuts (or any nut you like, see substitution ideas below)
- Desiccated coconut - this can be left out if you don't like coconut but I love the flavour and texture it brings

Here's how to make it


Step 1 – Melt the chocolate and coconut oil in a bowl
Step 2 - Add marshmallows, peanuts and coconut and mix until all add ins are covered in chocolate.


Step 3 - Pour the rocky road into the prepared tin and spread evenly using a rubber spatula. Place in the fridge and allow to set for a few hours until hard.
Step 4: Lift out of the tin and slice using a sharp knife (it helps if the knife is warm).
If you are planning to keep the rocky road around to snack on, store it in an airtight container at room temperature.
If you are gifting the rocky road, I like placing a few pieces in a cellophane bag and tying it up with a ribbon or filling up a glass jar for a more sustainable packaging option!
Substitutions
Ok, so clearly this recipe is my preferred list of rocky road ingredients, but the great thing about rocky road is that you can sub out almost anything! As long as you follow the base recipe and use the same amounts of chocolate and add ins, you can customise this however you (or your giftee) like!
- Chocolate - you can use plain chocolate and add in lollies and crushed biscuits separately if you can't find this particular block. And you can use dark, milk or white chocolate!
- Marshmallows - use big ones and chop them up or try mini ones! You could even make your own and use those in here too
- Peanuts - try almonds, cashews, macadamia nuts or pistachios

Rocky Road lasts for a good few weeks either at room temperature or in the fridge, although the fridge will make the marshmallows chewier.

10 Minute Rocky Road Recipe
Ingredients
- 500 grams Whittaker's Berry Forest Chocolate or other chocolate of choice
- 2 Tablespoons coconut oil
- 200 grams marshmallows sliced in half
- ½ cup roasted peanuts
- ¼ cup desiccated coconut
Instructions
- Line a 20cm square baking tin with baking paper.
- Break up the chocolate blocks and place the pieces in a microwave safe bowl along with the coconut oil. Melt in 30 second increments until chocolate is completely melted.
- Add marshmallows, peanuts and coconut and mix until all add ins are covered in chocolate.
- Pour the rocky road into the prepared tin and spread evenly using a rubber spatula.
- Place in the fridge and allow to set for a few hours until hard.
- Lift out of the tin and slice using a sharp knife (it helps if the knife is warm).
