Super speedy simple mushroom pasta with garlic, herb & butter sauce - a perfect throw together meal, ready in 20 minutes!
We survived opening weekend!
The first weekend in May is opening weekend for duck shooting which in our house, is Josh's equivalent of Christmas. His friends all come out on the Friday night, they are so excited they can barely sleep and then are up before the crack of dawn down at the dam where I then don't see them for the rest of the weekend.
Except when they want food.
They were even planning on staying down at the mai mai (duck shooting hut that Josh built on the dam) so I had my own wild night planned. You know...painting my nails, comfy pants, wine and Friends re-runs. Epic night in.
And then at 8.30pm they came home. And wanted food. Thank goodness for this lifesaver.
Lucky for me, I had only spent 20 minutes making my dinner so I still got a little bit of girl time in. And even better, it was 2 of my favourite things rolled into 1 easy to make, easier to eat comfort food meal. Mushrooms & pasta. Actually make that 3 - butter...lots of butter! Bad luck boys, the mushroom pasta was all mine!
I am without a doubt a mushroom lover. I know there are people out there that will be crying right now but let me tell you - if you are ever going to like mushrooms, this is the time. Because they are the superstar in this dish. Buttery, creamy mushroomy goodness with homegrown herbs! Win. It screams autumn comfort food.
This is the dinner for when you get home late but get distracted playing with your puppy and then suddenly realise you're starving and you didn't get anything out for dinner and you don't want to eat dinner at 10pm. I've got you covered!
While the pasta is cooking, slice the mushrooms, fry them in a pan of butter and garlic until they start smelling delicious, add milk, cream (hey, I never said this was health food) and chopped fresh herbs and simmer until the sauce reduces and starts to thicken.
Drain the pasta and pour it into the mushroom pan, stir it all together, top it with parmesan cheese aaaand inhale it! Because you just made an epic meal in less time than it usually takes me to decide what to wear in the morning.
It's a perfect dinner, but would also make a fab side dish. You could even add chicken to the pasta if you need some protein.
Dinner is ready...no boys allowed!

Simple Mushroom Pasta with Garlic, Herb & Butter Sauce
Ingredients
- 2 cups uncooked penne pasta
- 12 button mushrooms
- 40 grams butter
- 3 cloves of garlic crushed
- ¼ cup cream
- ¼ cup milk
- 2 tablespoon chopped fresh rosemary & thyme
- Salt & pepper
- Grated parmesan to serve
Instructions
- Cook pasta according to package directions.
- While pasta is cooking slice mushrooms.
- Add butter and garlic to a frying pan and cook until butter is melted and the garlic is starting to go transparent (about 2 minutes)
- Add mushrooms to the pan and fry for 5 minutes. Add cream, milk & chopped fresh herbs, bring to the boil and simmer for 5 minutes until the sauce starts to reduce.
- Drain the pasta, add it to the mushroom pan and stir through.
- Serve immediately with grated parmesan and more fresh herbs.

Fabulous meal for our friday night tea. Did add a good dollop of basil pesto as needed to finish it up, so paired with that and crusty baquette, one lovely easy meal.
