    If you are into popsicles for breakfast you are in luck. I've got a recipe for granola, yoghurt & berry popsicles that you can 100% eat for breakfast without feeling bad about it! Yuuuuus!

    We have launched into autumn so quickly here. We got the tail end of a tropical cyclone that left us stranded at home on Wednesday morning - all 3 main roads into town were flooded! To make things worse it was my really busy day at work and it was the first week that the girl who will be replacing me was there! Luckily my other amazing workmates helped out and Josh & I eventually made it into town about lunchtime in his monster truck tyred 4 wheel drive ute. Phew! I'm telling you though, at almost 34 weeks pregnant it definitely made us think about how far out of town we live and I was preeeetty happy I wasn't about to go into labour!

    But these granola, yoghurt & berry popsicles. It's hard to believe they are actually healthy. Granola = good! Greek yoghurt + honey = good! Berries = GOOD! And now we are all channeling Joey & the beef trifle right? Great. Except that these things all actually work together and taste seriously delicious!

    Making the popsicles themselves is a really simple matter of layering up. Start with a layer of smashed berries. I used a mixture of strawberries, blueberries & raspberries because that's what I had, but use your favourites. You really could use any fruit you wanted in place of berries too. Also, because it is coming to the end of berry season here...:( frozen berries work just as well, just let them thaw a little before smashing them up. After the layer of berries, a layer of Greek yoghurt with a little honey mixed in. I add honey because I use unsweetened Greek yoghurt and freezing it dulls down the flavour a little. The honey makes it extra delicious and adds sweetness. You can add more or less here if you want. The middle layer is granola. Use store-bought if you want, or try this quick homemade 15 minute stovetop granola - it's perfect! Finish with another layer of berries and more yoghurt, pop a stick through them and freeze for a few hours.

    Granola, Yoghurt & Berry Breakfast Popsicles

    Ingredients

    • 1 cup Greek yoghurt
    • 2 tablespoon honey
    • 1 cup fresh or frozen berries (I used a mixture of strawberries, blueberries & raspberries)
    • ½ cup granola

    Instructions

    • In a small bowl mix together the yoghurt & honey.
    • In another small bowl smash the berries together - if they are frozen, allow them to thaw slightly first.
    • Layer into popsicle molds a layer of berries, then a layer of yoghurt, a layer of granola, another layer of berries and finish with the last of the yoghurt.
    • Put a popsicle stick into the molds and put the popsicles into the freezer. Freeze for at least 4 hours before eating,
