    Smashed chickpea, tomato, cucumber & feta salad...the perfect throw together lunch for busy days.

    Also, how did my 10 days off work that seemed like such a long break just disappear? Back to work tomorrow? Ugh.  At least I have lunch sorted.

    Did anybody make any sorts of New Years resolutions? I'm still on the fence about them...I think it's a great time of the year for starting new habits buuuuut then again it's summer here and cocktailing is pretty high on my list of things to do. (Yes, cocktailing is a verb.)

    So just because it's January we all have to eat SALAD now. But hear me out. This is less about the salad, more about the 5 minutes it takes to throw together  this quick, easy & filling lunchtime meal.

    Also, for the record I eat salad solely so that I can also eat allthecookies and drinkallthecocktails and not feel completely guilty about it. Word.

    This salad was inspired by one of my favourite bloggers Maria - I saw it and wanted it! Only thing was that avocados are still coming in at $3.50 a pop at the moment and when you suck as much as I do at picking ripe avocados, it's not worth the risk! Lucky for us I have tomatoes out of my very own garden...woohoo! And there is feta, because a salad without feta is not really something I wanna talk about.

    Rinse & drain the chickpeas, smush them up a little with a fork, throw in the tomato, cucumber and feta, squeeze in some lemon juice, crack some salt & pepper and you're done! You can practically do it with your eyes closed!

    It's a perfect protein packed lunch or snack and great for on the go. It will keep well in the fridge for a few days so make a big batch and that is lunch sorted for the week. Perfect for work lunches which unfortunately is something that is happening here tomorrow. And if you think you need a little extra, go ahead and wrap some bread around this and make it a sandwich...that'll be good too!

    Smashed Chickpea, Tomato, Cucumber & Feta Salad

    A simple, easy and tasty salad, perfect for lunches or a quick side dish for dinner!

    Ingredients

    • 1 can chickpeas rinsed and drained
    • 1 cup chopped tomatoes 2 or 3 medium sized tomatoes
    • 1 cup chopped cucumber
    • ½ cup feta about 80g
    • Juice of 1 lemon
    • Salt & pepper

    Instructions

    • Add chickpeas to a medium sized bowl and smash them slightly with a fork. Add tomato, cucumber and feta, squeeze in some lemon juice. Season with cracked salt & pepper and serve.
    • Store in an airtight container in the fridge.

      Such a winning salad, Laura! Simple but oh so deelish. Love it! Hope going back to work isn't too hard after all the holidaying and cocktailing! I'm back at work next week, too, so I feel your pain. We can do it! 🙂
