    It's time to get tropical, shake of those winter blues and embrace the sweet, sweet fact, that finally, after so many cold dreary winter months, summer is on the horizon! It's so close I can taste it! And the best way to start embracing summer is the thinking about all the fab summer cocktails that will be happening! Buuuut then toning it back a little because we're not quite into beach holiday mode yet, so we'll turn them into G rated smoothies, add them to our panicked summer body workout session and start feeling good about ourselves again. Ok? Great. First stop. Pina Colada smoothie aka my second all time favourite cocktail in smoothie form. On a side note, if anyone can come up with a way to turn a mojito into a legitimate smoothie that isn't weird, please let me know.

    The best part about this smoothie is that it's 3 simple ingredients that come together in 3 minutes and make 1 epic smoothie that makes you feel like you could be in a resort somewhere tropical. Kind of along the lines of this tropical smoothie but easier. And possibly even tastier.

    Frozen banana, fresh pineapple and coconut milk. The frozen banana creates a super thick and creamy base and the pineapple and coconut milk are what make the pina colada. The easiest way to deal with the frozen banana is to peel and slice the banana and then freeze it in a sealable container or bag in advance. But if you're like me and the frozen bananas in your freezer are thrown in there whole because they were borderline needing to be thrown out and have been rescued to use in all the well intended banana cakes/muffins that never seem to be made, grab them out whole and run them under warm water for 20 seconds of so until the skin peels off easily and the banana can be sliced with a sharp knife. Perfect! And actually, way less fussy than slicing and freezing. Epic laziness!

    It's the perfect smoothie for a quick breakfast, snack time or even as a fun after dinner drink.

    This pina colada smoothie might even be my favourite smoothie so far. Except maybe for this one.

    Pina Colada Smoothie

    Ingredients

    • 1 banana previously sliced and frozen
    • 1 cup chopped fresh pineapple
    • 1 cup coconut milk
    • optional Drizzle of honey for extra sweetness

    Instructions

    • Add all ingredients to blender and blend until smooth.
    • Serve immediately.

      This looks so delicious! I want to know how you spot a ripe pineapple though? All the ones I pick seem to be pale yellow and hard as rocks.

        Thanks Lucie! Oh man that is the most annoying thing - I'm like that with avocados! I tend to go for the darker green coloured pineapples - I seem to have pretty good luck picking them that way! They usually feel slightly softer too
