How to make s'mores at home. The quintessential American campfire dessert, made for New Zealand. Plus, how to make them on a campfire, the oven or the microwave!

A stack of s'mores on a sheet of baking paper with marshmallows on the side and another s'more with a bite taken out

One of my must try food items when we were in the USA was s'mores. I'd seen pictures, heard all about them and seen recipes for s'more flavoured just about everything, so I needed to know! And what is more fun than sitting around a campfire, toasting marshmallows and then squishing them between a couple of biscuits and some melty chocolate??

So for us Kiwis down here, without the essential ingredients, I thought I would break down exactly what they are, how to make them and what to use!

    Stack of s'mores

First up, the ingredients. S'mores are made up of 3 components.

    1. Graham crackers - these are biscuits, or cookies that are a staple in the US and are what holds together the s'mores
    2. Marshmallows - toasted over a campfire or put under the grill, this is the gooey filling of a s'more
    3. Chocolate! Either a thin piece of chocolate (think Lindt or the fancy Whittaker's blocks) or chocolate spread

    Simple! Here's what you need:

Ingredients for a made from scratch Kiwi s'more

    1. Homemade Graham Crackers
    2. Homemade Marshmallows
    3. Lindt milk chocolate squares

Homemade graham crackers on a white marble background

And for a store-bought Kiwi version

    1. Digestive biscuits (either plain or the chocolate coated ones)
    2. Marshmallows (the bigger the better)
    3. Lindt milk chocolate squares (or not, if you use chocolate digestive biscuits)

Homemade marshmallows on a baking sheet

    How to make s'mores

    Method 1: Campfire

The most authentic way to make a s'more! Either spread your graham cracker or digestive biscuit with chocolate spread, or place a piece of chocolate on one of the biscuits. Stick your marshmallow on the end of a long fork or stick and toast it until it is brown on the outside and gooey on the inside. Carefully place your marshmallow on the chocolate covered cracker/biscuit and sandwich the other one on top. Squish it all together and eat!

    Method 2: Oven

This is how I do it most of the time and the bonus is, you can make a few at a time. Line a baking tray with a silicone liner or baking paper and place a few graham crackers or digestive biscuits flat side up on the tray. Place the chocolate on top, then the marshmallow and put under the grill at about 200°C for 2-3 minutes until the marshmallows are golden brown and starting to bubble. Remove the tray from the oven and place the other crackers/biscuits on top and eat!

    Method 3: Microwave

This is a good option if you are only making one. Put a graham cracker or digestive biscuit flat side up on a small plate. Place the chocolate on top, then the marshmallow and microwave for about 30 seconds until the marshmallow starts to melt. Place the other cracker/biscuit on top and eat.

    Hand holding s'mores

    S'mores are perfect for:

    • Summer BBQ's
    • Kids sleepovers
    • Camping trips
    • Teacher gifts - wrap all the ingredients up in a bag with an instruction label

So what are you waiting for? This is the dessert of the summer - go make it!
