This chocolate coconut slice is a family favourite in our house. It has a chocolate & coconut base and chocolate condensed milk topping, it's easy to make and only takes 30 minutes!

Happy Monday everyone! How was your weekend?
Ours involved a long overdue morning on the farm for me - feeding the cattle, looking at the teeny new baby lambs and making the most of a dry morning to get outside and breathe some fresh air! We also rearranged our laundry #adulting, took care of Sage who was spayed on Thursday..."limit exercise for 2 days"...um, have you met my psycho hyperactive labrador puppy? And we finally made the pizza oven that I bought Josh for his birthday in December! But then it was too windy and rainy to actually use it so now it's sitting in our spare room waiting for summer.
And we ate so much delicious food. I'm usually a little consumed by making food specifically for the blog so I made a point this weekend to make delicious food for the whole purpose of just eating and enjoying it! We had fish tacos with all the fixings followed by outrageous salted caramel chocolate tarts with Josh's parents on Saturday night and I made attempt 1 to recreate the amazing gumbo we ate while in New Orleans. I actually think I gained 5kg over the weekend. Not even joking. Lucky I joined the gym last week (more adulting!)
So after all that business, even though it felt super relaxing, I have a really easy recipe for you today. This one is a family favourite of ours. My mum has made it for as long as I can remember and it's a slice that always makes an appearance at beach holidays, school camps and pretty much any family occasion.
It's really just a simple chocolate coconut slice but it is now known exclusively in our family as chocolate fish slice. Don't panic. it doesn't have fish in it. Actually, it doesn't even have chocolate fish in it. Chocolate fish slice happened after it came out with us on the boat one day and my uncle ate a piece with his fishy hands...um, gross Uncle Simon. He started calling it chocolate fish slice and the name stuck! So much that I actually don't know what the original name for this slice is.
But whatever you call it, it is one of the best. A chocolate coconut base that only takes 10 minutes to bake and then as soon as you pull it out of the oven you pour over even more chocolate coconut goodness.
Let it set (in the fridge to speed up the process), slice and demolish. It never lasts long in our house, so it's lucky it only takes 30 minutes to throw together!
My aunty & uncle who live in the US, (yes the uncle who created the chocolate fish reference) request chocolate fish slice whenever they come to visit, and either my mum or I am happy to oblige. I still can't believe he wasn't scarred for life by the fish incident!

Chocolate Coconut Slice {aka chocolate fish slice!}
Ingredients
Base
- 100 grams butter (melted)
- 1 cup (140g) flour
- 1 tablespoon cocoa powder
- 3 tablespoon hot water
- ½ cup sugar
- ½ cup dessicated coconut
- 1 teaspoon baking powder
Topping
- ½ cup condensed milk (about ½ a tin)
- 25 grams butter
- 1 cup icing sugar
- 1 cup dessicated coconut
- 2 tablespoon cocoa powder
Instructions
- Preheat the oven to 180°C/350°F
Base
- Combine all ingredients for the base in a small bowl. Press into a 20cm/8 inch square brownie tin and bake for 12 minutes.
Topping
- While the base is in the oven, melt the condensed milk and the butter in a small jug in the microwave or in a small pot on the stove.
- Sift icing sugar & cocoa powder into the mixture and add coconut. Stir to combine.
- Remove the base from the oven and immediately pour topping over. You may need to use a slightly wet knife or the back of a spoon to spread it over evenly.
- Allow to set completely (a few hours) before slicing into 16 pieces.
- Store in an airtight container for 1 week.

Hi Jacqui, the slice will set at room temperature, however you can put it in the fridge to help it set faster. Laura
