    You might remember that back in January I took part in a 30 day green smoothie challenge - which btw I would recommend to anyone to do...you'll feel SO good! Anyway it was during this time (of course) that my trusty blender of 7 years decided to give up the ghost. I went back and forth trying to decide if I was going to buy a replacement blender or go with what EVERYONE told me to do and buy a little nutri-bullet type thing.

    I totally did not give into peer pressure and decided that I actually use a blender for more than just smoothies so I went for it and bought a replacement regular blender. Since then, naturally I've only used it for smoothies {face palm} Until last weekend when I suddenly decided to use my blender for everything! YAY!

    Starting with breakfast food. Actual breakfast food. Sometimes I say it's breakfast food and you have to kind of take it with a grain of salt bc hi, I eat chocolate for breakfast. But these muffins. Actual 100% healthy breakfast food.

    Oats - yes
    Bananas - yes
    Eggs - yes
    Honey - yes
    Greek yoghurt - BIG yes!

    And then other ingredients that aren't specifically breakfast food but aren't actually really any type of food...you know, baking powder, cocoa powder and salt. But nothing that is frowned upon at 6am. Unless you put chocolate chips on top. Meh, everything in moderation right? These muffins also happen to be accidentally gluten free and refined sugar free, so if that's something that you need, you're in luck!

    I am still losing my mind over how easy these muffins are to make. They literally take 5 minutes, everything is thrown in the blender, whizzed up and then baked. I mean seriously, if you have kids, they could make these. I am pretty sure even husbands could handle it.

    The fact that they're without flour made me think they might be pretty dense, but even though they have a totally different texture to regular muffins, they are still super light.

    They're the perfect breakfast food or morning snack, will keep you going, taste awesome and will give you super powers! Ok, maybe not that last one.

    Now go blend some muffins!

    The easiest muffins in the world - 5 minutes prep and a blender is all it takes to make these chocolate banana blender muffins! They're refined sugar free and perfect for baking with kids!

    Cook Time: 17 minutes minutes
    Total Time: 22 minutes minutes

    Ingredients

    • 2 ripe bananas
    • 2 cups rolled oats
    • 2 eggs
    • ¼ cup honey
    • 3 tablespoon cocoa powder
    • ½ cup Greek yoghurt
    • 1 ½ teaspoon baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt
    • Chocolate chips optional

    Instructions

    • Preheat the oven to 180 degrees C.
    • Optional: add the oats to the blender and pulse a few times - this makes the oats more like flour and creates a softer muffin but this step is totally optional.
    • Add all ingredients to the blender, pulse a few times and then blend on low speed until ingredients are all incorporated. This will take 45 - 60 seconds. Stop the blender as needed to scrap the mixture down so that it all mixes in.
    • Pour the batter into a muffin tin lined with 12 paper cases. Sprinkle chocolate chips on top of the batter if using.
    • Bake for 15-17 minutes until a toothpick inserted in the centre comes out clean.
    • Cool in the tin for 5 minutes, then transfer to a cooling rack.
    • Store in an airtight container for a week or freeze.

      What an awesome recipe, Laura! I love the idea of just chucking everything in the blender and 5 minutes later having healthy, chocolatey muffins baking away in the oven. Hurrah for chocolate for breakfast - did life even exist before it?!

      Yum! These look so decadent it's hard to believe they're healthy--but they really are! And YAY for being easy to make. My schedule has been jam-packed lately so after I get around to picking up my blender from my mom's house, I'm definitely going to try these!
