Add coconut to a bowl. In a microwave safe jug melt the coconut oil. Stir in the honey & vanilla and add to the coconut, mixing thoroughly.
Refrigerate the mixture for 30 minutes - 1 hour and mold the mixture into balls. You will need to really squeeze the mixture together as it can be quite crumbly - it helps if your hands are slightly wet.
Put the balls back in the fridge and melt the chocolate either in the microwave or in a heat-proof bowl over a pot of water on the element. Remove the coconut balls from the fridge and coat in the melted chocolate using a spoon and letting the excess chocolate drip off before placing back on the tray.
Once all the balls are covered in chocolate put them back in the fridge for the chocolate to set. Keep them in the fridge to snack on whenever you need a sweet treat!
