Ingredients
  • 4 frozen hash browns
  • 3-4 rashers of bacon chopped
  • 3-4 large button mushrooms sliced
  • 8 cherry tomatoes halved
  • 1/2 cup grated cheese
  • 2-4 eggs
  • Salt & pepper
Instructions
  1. Night before:
  2. Place hashbrowns, bacon, mushrooms, tomatoes and cheese in a baking dish. Season with salt & pepper. Cover with gladwrap and refrigerate overnight.
  3. Morning:
  4. Pre-heat the oven to 180 degrees C
  5. Crack 2-4 eggs on top of the casserole.
  6. Bake for 35-40 minutes until the eggs are set.
  7. Allow to sit for 10 minutes before serving!
  8. Notes: You can assemble and bake in the morning, the overnight step is just to save time. This recipe is for 2 people, feel free to double the recipe and use a bigger dish
