rashers of bacon
large button mushrooms
Salt & pepper
Place hashbrowns, bacon, mushrooms, tomatoes and cheese in a baking dish. Season with salt & pepper. Cover with gladwrap and refrigerate overnight.
Pre-heat the oven to 180 degrees C
Crack 2-4 eggs on top of the casserole.
Bake for 35-40 minutes until the eggs are set.
Allow to sit for 10 minutes before serving!
Notes: You can assemble and bake in the morning, the overnight step is just to save time. This recipe is for 2 people, feel free to double the recipe and use a bigger dish
