Mint chocolate chip ice-cream - and no ice-cream maker needed! Perfect for the last of the summer days or for St Patrick's Day!

Ingredients

  • 300 ml cream
  • 1/2 x 400g tin condensed milk (about 1/2 cup)
  • 1/4 tsp peppermint extract
  • 1/8 tsp green food colouring
  • 1/2 cup chocolate chips

Instructions

  • Pour the cream into a large bowl or the bowl of a stand mixer and whip it until stiff peaks form.
  • Add the condensed milk, peppermint extract & green food colouring and mix well with the cream. Stir through the chocolate chips.
  • Pour into a freezer proof container and freeze overnight.
