    Today is our wedding day!!!

    Well, not really because I'm writing this in advance, but by the time you read this I will be getting ready to walk down the aisle with my Dad, who will hopefully not let me fall in my ridiculous (but totally necessary because Josh is over 6 ft tall) heels, to marry my best friend in the entire world.

    It's going to be the best day ever.

    There's going to be lots of yellow, cowboy boots, cupcakes, an awesome band, a superstar photographer, lots of wine and all of our family & friends in 1 place.

    Sounds like the perfect day to me.

    The months leading up to today have been long, busy and a little chaotic. The week leading up to today has been perfect. A few last minute touches, lots of help from family & friends but best of all, plenty of cupcakes, drinks and quiet nights in with my extremely soon to be hubby. This sorbet champagne cocktail joined the party pretty late in the piece, but the night before my last day at work just felt like we needed something special and this little number fit the bill perfectly. So perfectly that it made several more appearances throughout the week!

    I don't think I'll have one before the ceremony though...I'm going to need all the help I can get to stay on my feet and I'm not sure this will help! But maybe later once I've ditched the heels in favour of jandals and the dancefloor this will be what I need!

    Whatever you use, sorbet makes this drink extra cold, sweet & summery. You can use regular sorbet in this perfectly pretty champagne cocktail, or you can use the new Smirnoff vodka sorbet...it just adds a little something extra. Perfect if you are facing the most exciting and simultaneously nerve-wracking day of your life.

    Ingredients

    • 2 scoops sorbet I used Smirnoff Raspberry sorbet
    • Sparkling wine

    Instructions

    • Scoop the sorbet into 2 champagne flutes.
    • Top up with sparkling wine.
    • Garnish with fresh mint.
    • Serve immediately

      Happy wedding day Laura, I hope it was splendid! These cocktails look fab, I love a pink drink. I've never heard of Smirnoff sorbet before but it sounds like a genius invention, I'll have to try and get my hands on some 🙂
